80年以上続く伝統、成城パン
今回私たちが紹介するお店は、成城学園前駅から徒歩1分の場所にある成城パンさんです。
成城パンは成城学園生なら知らない人はいない、学園生御用達の自家製パンを製造・販売しているお店です。
昭和4年に初代社長である樋口茂勝氏により東京パンとして創業、昭和19年に株式会社成城パンと社名を改め、現在に至るまで80年以上続く伝統のあるパン屋さんです。

今回は初代社長の孫にあたる、三代目成城パン社長 樋口勝吾さんにお話を伺いました。
―お店のコンセプトを教えてください。
やはり「パン屋」なので、まずパンがおいしいこと。生地にはこだわっています。特に食パンやフランスパンのバケットなんかは、生地自体を味わうものなので、まずそれがおいしくないといけないと思っています。
―1番の売れ筋商品はなんですか?
パンドミという、フランスパンを食パンにしたような、外側はパリッと、中はふわふわっとした感じのパンがあるのですが、それはよく売れています。1日に2回焼き上げるのですが、半分くらいは予約で埋まっていますね。店頭にはなかなか並ぶことがない商品です。
―新商品というのはどういうきっかけで生まれるのですか?
アイデアベースで生まれることももちろんあるのですが、これからはこういうパンが流行る、といった情報が同業者の中ではある程度まわります。今年でいうと塩パンなんかが良い例ですけど、マスコミが取り上げる前に、こういった情報が結構入ってくる。そういったデータをもとに、調査を重ねて新商品を発売することが多いです。でもまさか塩パンがあんなに流行るとは正直思ってなかったですね(笑)。
―これからの季節限定のパンがあったら教えてください。
10月はハロウィンなので、かぼちゃのタルトがおすすめです。昔ながらのエッグタルトというか、生クリームと卵ベースで作るんですけど、それにかぼちゃのあんこを入れて、バットマンのような形にしたり、お化け屋敷のお城のようなデザインにしたりと、3種類くらい作る予定ですね。あとは11月頃から2月頃までいちごコロネを作ります。これはパンなんですけど、まるでショートケーキのような、ケーキ屋さんで売っているような感じでやろうと思っています。
―最後に、樋口さんのパン作りへの信念があれば教えてください。
私は10年くらい修業の期間があって今に至るのですが、パンと向き合うひたむきな想いは初心のころから変わってないですね。当時はなんでも自分が先頭に立ってやっていたのですが、今では優秀なスタッフがその想いを汲み取りながらやってくれています。だからこそ80年以上経った今でも変わらない味を守り続けられていると思いますし、これからもこの味を守り続けていきたいと思っています。
今回お話を伺っていく中で、パン作りへの情熱と根底にある信念、そしてなにより樋口さん自身のパンへの愛情がひしひしと伝わってきました。成城を代表するパン屋さんには、それにふさわしいリーダーがいるのだなと感じました。

Over 80 years of tradition, Seijo Bakery.
The shop which we visited is Seijo Bakery, just one minute walk from Seijo-Gakuemmae Station.
Seijo Bakery is the shop that sells homemade bread and is known to all students of Seijo Gakuen.
It was founded as Tokyo Bakery in 1929 by Shigekatsu Higuchi, who was the first owner. The name was later changed to Seijo Bakery, and the shop has continued as a traditional bakery for more than 80 years, up to the present day.
This is a photograph taken at the time of the establishment of the business. The bakery has continued to do business at the same location for all those years.

We spoke to Seijo Bakery’s president, Mr. Shogo Higuchi, the third generation president of the company and grandson of the founder.
Q: “What is the bakery’s business concept?”
A: “Well, first of all, we are a bakery, so the bread should taste good. We are very careful about the dough. In particular, for plain bread and baguettes, it’s the dough that carries the taste, so the dough itself needs to be delicious.”
Q: “What is the product which sells the most?”
A: “It is a kind of French soft bread called “Pain de mie”. The crust is very crispy, and the inside is very soft. That sells very well. We bake it twice a day, but about half of it is already reserved. We almost never have any left to put on the shelves.”
Q: “How do you create new products?”
A: “Of course there are some that are created through our ideas, but there is information among people in the industry about what kind of bread is becoming popular. For example, the croissant-shaped “shio-pan” is a good example from this year. Long before the media reported it, information about this was already circulating in the industry. Based on these kinds of data and other research, we often develop new products. Although, honestly speaking, I didn’t think that shio-pan was going to be such a hit.” (Laughs)
“So, what are the specialties for the coming season (A-W ’16)?”
“The theme in October is Hallowe’en, so I’d recommend pumpkin tarts. I’m going to take a traditional egg tart, that is based on fresh cream and eggs, then fill that with pumpkin paste and make it into a Batman shape. Another one will be in the shape of a haunted house, so I’ll make about three different types. Then, from around November till February we’ll be making strawberry filled Brioches. Though this is bread, I feel it is kind of like the shortcake that you might find in a cake shop.”
“And, finally, Higuchi-san, please tell us your philosophy for making bread.”
“I’ve been training for ten years now, but my feeling of single mindedness about baking has not changed in the slightest. At the time, I was taking the lead in everything myself, but now I have excellent staff that take on the challenge with that feeling. That’s why we’ve been able to maintain the same consistent taste for over 80 years, and why we’ll be able to continue to stay true to this taste in the future.”
In this interview, I was able to see Higuchi-san’s passion and deep rooted commitment to baking, and, above all, his love of bread.
I truly felt that he was qualified to be considered the leader of the bread makers who represent Seijo.
I really hope that those of you who read this article will be encouraged to visit the shop and try out its delicious bread.
